The batter is spooned into still, hot heavy sugary syrup. The mixture is then taken to the boil to cook the batter on both sides. Once cooked, the batter is then poured into another bowl which is filled with cooler and lighter syrup. The batter is then allowed to absorb the lighter syrup.
