Lecithin is used in white chocolates as emulsifier. Vanilla pod extracts are mixed into white chocolate to flavor it. The specialty of white chocolate is that it doesn't melt in room temperature. Some companies try to replace cocoa butter with cheap solid milk or hydrogenated vegetable fat. But chocolate generated in this way hardly emits the aroma of cocoa. It is really difficult to prepare white chocolate as the loose bonding of cocoa butter molecule is easily split into molecules of oil. The original butter can never be recovered from it any more. White chocolate gift can comprise of chocolates with cream and nuts as filling.
