Banana Muffins with Mascarpone Cream Frosting
Muffins:
3 cups flour, 1 teaspoon baking soda, 1 tea spoon salt, ½ teaspoon baking powder, ½ teaspoon ground cinnamon, ½ teaspoon ground nutmeg, 2 cups sugar, 1 cup vegetable oil, 3 large eggs, 1 tablespoon vanilla extract, 4 ripe bananas, peeled and coarsely mashed.
Frosting:
3 ounce cream cheese, room temperature, 6 tablespoons unsalted butter, 3 tablespoons honey, ½ cup chopped walnuts, toasted.
Preparation:
Muffins: Line about 18 muffin cups. Keep the oven pre-heated at 325:F. Mix the flour with baking soda, salt, baking powder, cinnamon and nutmeg. Beat sugar, oil, eggs, vanilla essence together. Put the batter into the muffin cups. Bake the muffins in the pre-heated oven for 25 minutes. Insert a tester into it and see whether any crumbs are left on it.
