One Recipe for the Simnel Cake:
Ingredients:
1½ Cups butter
4 Cups flour
8 eggs
1 teaspoon salt
4 Cups sugar
2/3 Cup grated lemon & orange peel
2 Cups Currants
8 oz. almond paste.
Preparations:
Mix Butter and sugar till it is smooth. Then add eggs one by one after beating the previous one. Add flour and salt to this mixture. Mix peel and currants into the batter. Line a 12” X 15” greased tray with wax paper. Pour in half the batter into the tray. Bake this mixture at 300 degrees for about an hour.
- Beef Brisket with onion – Lemon Marmalade
Ingredients:
1 beef brisket (6 to 8 lbs.)
2 large onions, sliced
2 large lemons, peeled and thinly sliced
2 cups port
½ cup brown sugar
3 tablespoons mixed herbs (optional- rosemary, basil, oregano,thyme)
4 cloves garlic, chopped coarsely
1-1/2 teaspoonful coarsely ground pepper.
Preparation:
Cut excess fat from the brisket. Lay lemon, onion slices and garlic into the pan. Place the brisket on the vegetables. Take brown sugar, port and herbs and mix together until sugar melts. Spread this mixture evenly on the brisket. Sprinkle pepper and cover the pan tightly with a foil. Bake in a 300: F oven for about 4 hours. As the brisket becomes tender, uncover the tray and put it back into the oven and bake for 20 minutes. Raise the temperature to 450 degree F. this will make it slightly brown. Then remove brisket from the pan. Skim off the fat from the pan liquid and put it into a sauce pan. Boil the juices and vegetables and keep on stirring while boiling. When the mixture is thick, reduce heat to medium and keep on stirring for about 20 minutes. Now add salt to taste. Spoon marmalade on brisket and serve hot.
